2 Lbs chicken thighs or whole chicken 907g-cut into bite size
6 Cups water
1 Tbsp oil
4 Cloves garlic-chopped
1 Stalk lemongrass-sliced
7 Thai eggplants-quartered
2 Chinese okras-sliced
7 Choy sum-sliced
1-2 Cups dill-chopped
4 Green onions-sliced
1/2 Onion-sliced
2-3 Tbsp padaek
2 Tbsp fish sauce
1 1/2 Tsp salt
1 1/2 Tsp msg-optional
1 Tbsp chicken bouillon
Chilies to taste
1/3 Cup sweet rice-soaked, drained and pounded
1/4 Cup water-add to the pounded rice

In a large pot, heat the oil over medium heat.

Add the chopped garlic and sliced lemongrass, sauté until fragrant.

Add the chicken pieces and cook until browned.

Pour in the water and bring to a boil.

Add the quartered Thai eggplants, sliced Chinese okra, and sliced choy sum.

Stir in the chopped dill, sliced green onions, and sliced onion.

Add the padaek, fish sauce, salt, msg, and chicken bouillon, stirring well to combine.

Add chilies to taste.

In a separate bowl, mix the soaked, drained, and pounded sweet rice with 1/4 cup of water, then add to the pot.

Simmer until the vegetables are tender and the flavors meld together.
