Nigerian Tomato Stew, also known as 'stewed tomatoes', is a staple in Nigerian cuisine, often served with rice or yams. This dish reflects the vibrant flavors of Nigeria, showcasing the importance of tomatoes and peppers in local cooking. It is a versatile base for various proteins and is enjoyed across the country, with each region adding its unique twist. Today, it has gained popularity beyond Nigeria, celebrated for its rich taste and adaptability in various dishes.

Prepare the ingredients: fresh tomatoes, sweet pepper, purple onion, habanero pepper, ginger, spring onion, and crushed tomatoes.
Sprinkle salt on the chicken and roast it until the fat melts away.
Prep the veggies by cleaning the ginger and cutting the spring onions, reserving the leafy parts for garnishing.
Blend the habanero pepper, ginger, fresh tomatoes (seeds removed), sweet pepper, and spring onion (crunchy part) together.
Transfer the blended mixture into a pot for steaming, covering it just enough for the tomatoes to start boiling.
Transfer the chicken into another pot, adding leftover ingredients for extra flavor, including onions and thyme.
Season the chicken with star seasoning cubes, curry powder, mixed spices, and salt, adding a little water to the bottom.
Check the steaming tomatoes, which should be boiling; avoid stirring to prevent burning.
Scoop the steamed tomatoes into a bowl and add crushed tomatoes to the mixture without stirring the pot.
Scoop chicken stock into the tomato mixture to achieve a smooth consistency, then set the chicken aside.
Heat enough oil in a pot for frying the tomatoes, ensuring it's hot before adding the chopped purple onions and crunchy spring onions.
Saute the onions for about a minute, then add the crushed tomatoes first to fry them for about 5-6 minutes.
Gradually add the steamed tomato mixture in steps to avoid exceeding the oil amount.
Add spices to taste after another 5-6 minutes of frying the tomatoes until well combined.
Pour in the chicken stock and transfer the chicken into the pot, allowing it to marinate for an extra 5 minutes until it boils.
Garnish with the leafy parts of the spring onion and cover to steam until ready to serve.
