1 kilo (2.2 lb) potatoes
200 g bacon
4 eggs
1 shallot
2 spring onions
2.5 tbsp whole grain mustard
2.5 tbsp white wine vinegar
60 ml (1/4 cup) extra virgin olive oil
1/4 cup full fat mayonnaise
40 g sour cream
1 tbsp creamed horseradish
1/4 lemon
salt

Peel 1 kilo of potatoes.

Add the potatoes to a large pot and cover with cold water, about 1 inch above the potatoes.

Season the water with salt and bring to a boil.

Cook the potatoes for 15 to 16 minutes until fork tender.

Drain the potatoes and let them cool.

Prepare 200 g of bacon on a baking tray lined with parchment paper and bake at 190°C (375°F) for 12 to 15 minutes until crispy.

Boil a saucepan of water and add 4 eggs, cooking for 12 minutes for hard-boiled eggs.

Place the cooked eggs in ice cold water to stop the cooking, then peel them.

Chop the eggs and set aside.

Prepare crispy potato skins by tossing them with oil, salt, and pepper, then bake for 12 to 15 minutes until crispy.

For the first salad, chop 1 shallot and 2 spring onions.

In a bowl, mix 2.5 tbsp whole grain mustard, 2.5 tbsp white wine vinegar, chopped shallot, 60 ml extra virgin olive oil, salt, and pepper to create a dressing.

In a bowl with the cooled potatoes, add 1/4 cup mayonnaise, 40 g sour cream, 1 tbsp creamed horseradish, juice of 1/4 lemon, chopped spring onions, and 2/3 of the crispy bacon.

Pour the dressing over the potato mixture and mix gently, adjusting seasoning as needed.

Serve garnished with remaining spring onions and bacon.
