Peel the russet potatoes and dice them into 1-inch cubes.
Add the diced potatoes to a pot of water, ensuring they are covered by about an inch of water.
Add salt to the water and bring it to a boil.
Once boiling, reduce heat to low and cook the potatoes for about 8 minutes until tender.
Lay the cooked potatoes out on a cookie sheet to cool for about an hour.
In a large bowl, add the cooled potatoes.
Add 1 cup of mayonnaise, 2 teaspoons of Dijon mustard, 2 teaspoons of rice wine vinegar, 1 tablespoon of ranch seasoning mix, salt, pepper, and garlic powder to taste.
Add 1/2 cup of bacon crumbles to the bowl.
Mix all the ingredients together until well combined.
Garnish with sliced green onions before serving.
