1 Shallot, Finely Diced
60ml (1/4 Cup) Extra Virgin Olive Oil
60g (3 Tbsp) Mayonnaise
20g (1 Tbsp) Horseradish Cream
40g (2 Tbsp) Sour Cream
1/4 Lemon, Juiced
200g (7oz) Streaky or Middle Bacon, Diced
2 Spring Onions (Scallions), Thinly Sliced
