Finely chop the garlic, onion, cubanel peppers, and olives.

Heat a wide saucepan on medium-high heat and add vegetable oil and achiote oil until it shimmers.

Add the ground beef to the pan and begin sautéing, breaking it into small pieces with a spatula.

Cook the meat until most of the liquid has evaporated.

Add the diced vegetables to the pan and stir to incorporate, sautéing for 3-4 minutes until the onions are translucent.

Add the sofrito and sauté for another 2-3 minutes.

Add the tomato sauce and adobo, sautéing for a couple of minutes until any remaining liquid has evaporated.

Taste the picadillo for salt and adjust as necessary.

Remove the picadillo from heat and let it cool down.

If not eating immediately, transfer the picadillo to an airtight container and refrigerate.
