3 Tablespoons oil
1 medium onion, chopped
2 cloves garlic, minced
1 sprig fresh parsley, chopped (or dried)
2 celery ribs, finely chopped
1/4 pound ground beef
2 beef bouillon cubes or equivalent bouillon powder
1/4 teaspoon pepper
3 cups fresh green beans, cut in 1/4 inch pieces
3 to 4 medium carrots, peeled and finely diced
2 to 3 medium potatoes, peeled and finely diced
Salt to taste
chopped fresh cilantro (optional)

Saute in oil the onion, garlic, parsley, and celery.

Add the ground beef, and cook until browned.

Add the bouillon cubes (without water), black pepper, green beans, carrots, and potatoes.

Cover and cook over low heat, stirring occasionally, until vegetables are tender, about 20 minutes.

Add salt and cilantro, if desired.
