juice from 1 lime
300 grams fresh pineapple (or from a tin or frozen)

Add 1 tablespoon of olive oil, 1 tablespoon of apple cider vinegar, 1 tablespoon of lemon juice, 1 tablespoon of soy sauce, 1 teaspoon of thyme, and 2 teaspoons of pre-made jerk seasoning to a large bowl.

Add equal measures of garlic and ginger to the bowl and mix everything together.

Add 600 grams of chicken thighs or chicken breasts to the marinade and ensure they are well coated.
