Korean Style BBQ Short Ribs, known as Galbi, have their roots in Korean cuisine, where grilling meats is a cherished tradition. Often enjoyed during family gatherings and celebrations, these ribs reflect the balance of flavors in Korean cooking—sweet, savory, and umami. The dish has gained global popularity, with many variations emerging, yet the essence of marinating and grilling remains central to its appeal.

Canned pears can be a budget-friendly option for sweetness.
Grate the whole Asian pear into a bowl.
Peel and shred half of the yellow onion and add it to the bowl.
Peel the six cloves of garlic and add them to the bowl.
Peel the ginger, break off a 1 inch piece, and give it a rough chop before adding it to the bowl.
Blend the mixture of pear, onion, garlic, and ginger in a food processor or blender until mostly smooth.
Add the blended mixture back to the bowl.
Add half a cup of soy sauce, half a cup of water, 1/4 cup of rice wine, and 2 tablespoons of sesame oil to the bowl.
Roughly chop about four green onions and add them to the bowl.
Season the marinade with a pinch of kosher salt, black pepper, and 1 tablespoon of honey or sugar.
Whisk the marinade until well mixed and set aside.
Wash the 3 lbs of short ribs in a bowl with cold water and a little baking soda for 5 to 10 minutes.
Drain the water, refill with cold water, scrub the ribs, and rinse them one final time.
Wrap the washed meat in a paper towel and squeeze to dry it.
Place the ribs in a large container and pour the marinade over them, ensuring they are well coated.
Marinate the ribs for 24 hours, rotating them every 6 hours for even coverage.
After 24 hours, preheat the broiler on high.
Place the marinated ribs on a broiler pan or a wire rack set over a sheet pan.
Broil the ribs about 6 to 7 minutes per side, flipping them until charred and crispy.
Let the meat rest on the rack for a few minutes after broiling.
Serve the ribs on a serving dish over leafy greens, garnished with sesame seeds and sliced green onions.
