Recipe Information
Zucchini Basil Soup
Slice one leek.
Slice one half of the fennel.
Slice 600 g of zucchini.
Heat up 2 tbsp olive oil in a large pot.
Add 3 chopped garlic cloves, chopped chili and leek.
Mix and saute for 4 minutes.
Add fennel and zucchini.
Mix and saute for 5 minutes.
Pour in 750 ml vegetable broth.
Add 200 g green peas.
Cover with a lid and let it cook for 5-7 minutes.
Ladle soup into a blender.
Add 30 g grated parmesan cheese and 1 bunch of fresh basil.
Close the lid and blend until smooth.
Serve with a dollop of sour cream and seed crackers.
