1

Prepare 600g of tilapia fish, cleaned and scored on both sides.

2

Put the fish on a heat-resistant plate.

3

Sprinkle 1 tsp of salt inside the fish stomach and rub it to marinate the body and in between the cuts.

4

Flip the fish and repeat the salting process.

5

Stuff all the ginger strips into the stomach of the fish.

6

Prepare hot boiling water in the steaming pan.

7

Place the steamer and put the fish in it.

8

Cover the steamer and set the timer for 8 minutes.

9

While waiting for the fish to cook, mix the sauce by adding 1.5 tbsp of light soy sauce and 1/4 tsp of sesame oil into the 80 ml of water. Stir and mix until well combined, then leave it aside.

10

After 8 minutes, check the fish; it should be 80% cooked and have released a lot of fishy water. Carefully remove the fish from the steamer and discard the fishy water.

11

Put the fish back in the steamer and pour the soy sauce mixture over the fish.

12

Sprinkle a little bit of crispy fried garlic on top of the fish.

13

Cover the steamer and continue to steam for another 6 minutes.

14

After 6 minutes, remove the fish from the steamer.

15

Sprinkle some cut spring onions and the crispy fried garlic on top of the fish.
