Cut 5 pounds of pork shoulder into big chunks.

Pat the pork shoulder dry and ensure it's at room temperature.

Mix 5 teaspoons of salt and 1 tablespoon of black pepper, then spread it on the pork, patting it in.

Set the seasoned pork aside and prepare the salsa ingredients.

Roast 3 poblano peppers, 5 green or Anaheim peppers, and 2 jalapeños until charred.

Add 1/2 onion, 1/2 of cilantro, the roasted chiles, 1/2 teaspoon of thyme, 1 teaspoon of oregano, and 1 teaspoon of ground cumin to the blender and blend until combined.

Set the Instant Pot to the sauté setting and add a little lard to heat up.

Brown the pork in batches for about 4 minutes per side, then remove from the pot.

Add the blended salsa to the Instant Pot, scraping the bottom to deglaze, then add the browned pork back in.

Close the Instant Pot, set it to sealing, and pressure cook for 65 minutes.

After 65 minutes, allow the meat to sit for 20 minutes before releasing the valve to let out the steam.

Remove the lid and take out the meat, which should be very tender and easy to shred.

Pour the chile verde sauce over the shredded meat and serve in tacos with cilantro and lime.
