Samosa Style Crepes

Originating from the Indian subcontinent, samosas are beloved snacks filled with spiced potatoes and peas. The concept of wrapping flavorful fillings in a thin layer has inspired variations worldwide, including these crepes. They blend the traditional samosa filling with a French technique, showcasing the adaptability of global cuisines in modern cooking.

Mix all-purpose flour, water, eggs, and salt in a bowl until smooth.
Let the batter rest for 30 minutes.
Heat a non-stick skillet over medium heat and lightly grease it with oil.
Pour a ladle of batter into the skillet, swirling to form a thin crepe.
Cook until the edges lift and the bottom is golden, about 2-3 minutes.
Flip and cook the other side for another 1-2 minutes.
Remove the crepe and keep warm. Repeat with remaining batter.
Boil potatoes until tender, then peel and mash them.
In a pan, heat oil and sauté onions until translucent.
Add ginger, garlic, green chilies, and spices; cook until fragrant.
Stir in the mashed potatoes and peas, mixing well.
Add lemon juice and chopped cilantro; season with salt and pepper.
Spoon the filling onto one half of each crepe.
Fold the crepe over the filling and press gently to seal.
Serve warm with chutney or yogurt.
