Make the coconut milk mixture for the top layer by mixing 500ml coconut milk, 1/2 tsp salt, and 40g sugar. Set aside.

Prepare the bottom layer by mixing 110g palm sugar and 150ml pandan juice until the sugar is dissolved.

Add 65g rice flour and 25g tapioca flour to the pandan mixture and mix well.

Place ceramic sauce dishes on the top tier of the steamer.

Cover the lid and steam for 2 minutes over high heat.

Fill each sauce dish 3/4 full with the flour mixture.

Steam over medium heat for 8 minutes or until the batter is set.

Gently pour the coconut milk mixture on top of each sauce dish.

Cover the lid and steam for 7-10 minutes over high heat until the topping starts to turn oily.
