Heat 1 quart of safflower oil in a deep pan to 350-360°F using a deep-fry thermometer.

In a small bowl, combine 3 egg yolks, 2 tablespoons sugar, and a pinch of salt. Beat with a hand mixer on high for about 1 minute until thick and pale.

Add 2 tablespoons reduced fat sour cream, 1 teaspoon vanilla extract, zest of 1/2 lemon, and zest of 1/2 orange to the egg mixture and mix until combined.

Gradually add 3/4 cup flour on low speed until incorporated, then add 1-2 tablespoons more flour until the dough is kneadable.

Knead the dough on a floured surface for about 50 turns until smooth.

Cut the dough in half and wrap one half in plastic wrap while working with the other half.

Roll out the dough on a well-floured board until it's paper-thin, about 12 inches wide.

Cut the rolled dough into strips about 1-1.25 inches wide, then cut those strips into shorter pieces.
