In modern times, oat flatbread has gained popularity as a gluten-free option, appealing to those with dietary restrictions while still providing a hearty texture and flavor.

Place a pan over medium heat.
Pour in 2 cups of water.
Add 1/4 teaspoon of salt.
Wait for the water to almost boil and start bubbling.
Take 125 g of rolled oats and grind them into fine flour.
Sift the oat flour to make it smooth. If anything remains in the sieve, grind it again and add it back.
Add the oat flour to the boiling water and immediately start stirring.
Spread the dough across the pan to help evaporate excess moisture.
Stir until the dough forms a single soft mass.
Remove the pan from the heat and transfer the dough to a flat surface to cool slightly.
Grease your hands with a little olive oil and knead the dough until smooth.
Form the dough into a ball.
Divide the dough into six equal portions.
Roll each portion into a ball and set them aside. Cover them with a cloth so they don't dry out.
Place one dough ball between two sheets of parchment paper.
Use a plate to press it down flat. No rolling pin needed.
If the dough sticks, lightly oil the parchment or dust it with flour before placing the dough.
Flatten as much as possible to avoid any raw texture during cooking.
Remove the top parchment carefully.
Heat a clean pan over medium heat until hot.
Use the bottom parchment to flip the dough into the pan.
Cook for about a minute on one side, then flip.
If it lifts off the pan, press it down gently with a clean cloth or spatula so it makes contact with the hot surface and cooks through.
Flip a few times to ensure it puffs and cooks evenly.
Once puffed and cooked, remove the flatbread and place it on a cooling rack to prevent sogginess.
