Soft Pretzel

Cultural Context

Soft pretzels have their roots in Germany, where they were traditionally enjoyed as a street food and often paired with mustard or cheese. They symbolize good luck and are often served during festivals and celebrations. Today, soft pretzels have found their way into American culture, particularly at sporting events and fairs, where they are enjoyed with various dips and toppings.

1

Add 1 teaspoon of white sugar to a small bowl.

2

Pour in 1 and 1/4 cups of warm water (about 110°) and dissolve 4 teaspoons of yeast in it.

3

Let the yeast mixture stand until foamy, about 10 minutes.

4

In a large bowl, mix 5 cups of all-purpose flour, 1 and 1/2 teaspoons of salt, and 1/2 cup of white sugar.

5

Make a well in the center of the dry ingredients and pour in the yeast mixture and 1 tablespoon of vegetable oil.

6

Mix and form this into a dough, adding 1 or 2 tablespoons of water if the dough is a bit dry.

7

Turn the dough out onto a lightly floured surface and knead until smooth, about 7 or 8 minutes.

8

Lightly oil a large bowl and place the kneaded dough in it, turning once to coat with oil.

9

Cover the bowl with plastic wrap and place it in a warm place to let the dough rise until doubled in size, about 1 hour.

10

Preheat the oven to 450°.

11

In a large baking dish, dissolve 1/2 cup of baking soda into 4 cups of hot water.

12

Grease two cookie sheets.

13

Once the dough has doubled in size, turn it out onto a lightly floured surface and divide it into 12 equal pieces.

14

Roll each piece into a rope and twist it into a pretzel shape.

15

Dip the pretzels one at a time into the baking soda mixture and place them on the greased baking sheets.

16

Sprinkle the pretzels evenly with 1/4 cup of kosher salt.

17

Bake in the preheated oven for about 8 minutes until golden brown.

18

Serve warm, optionally dipping in melted butter and coating with your favorite flavors.
