Pour in vegetable broth and add bay leaves and thyme; bring to a boil.
Reduce heat and simmer until potatoes are tender, about 15-20 minutes.
Remove bay leaves and use an immersion blender to puree the soup until smooth.
Stir in coconut milk and heat through, about 2-3 minutes.
Season with salt, black pepper, and chili flakes to taste.
Finish with a squeeze of lime juice and garnish with chopped parsley.
