Preheat the oven to 400°F (200°C).
Roll out the puff pastry on a floured surface and cut into squares.
In a bowl, mix cream cheese, sugar, and honey until smooth.
Peel, core, and slice the apples, then toss with cinnamon and lemon juice.
Place a spoonful of the cream cheese mixture in the center of each pastry square.
Top with a few apple slices over the cream cheese.
Fold the corners of the pastry squares towards the center to create a pocket.
Brush the tops with egg wash for a golden finish.
Bake the pastries in the preheated oven for 15-20 minutes until golden brown.
Remove from the oven and let cool slightly.
Serve the danishes warm or at room temperature.
