2 tablespoons of I Can't Believe It's Not Butter spread
2 medium sweet onions, thinly sliced
1 clove of garlic
1 teaspoon of fresh thyme
5 and 1/2 cups of water
2 tablespoons of dry cherry (if desired)
6 slices of French bread, about half an inch thick
1 and 1/2 cups of shredded Swiss cheese

Melt 2 tablespoons of I Can't Believe It's Not Butter spread in a large saucepan over medium heat.

Add 2 medium sweet onions, thinly sliced, and cook for about 15 minutes, stirring frequently until the onions are golden.

Stir in 1 clove of garlic and 1 teaspoon of fresh thyme and cook for another 5 minutes until the onions are browned and very tender.

Stir in 5 and 1/2 cups of water and add the 2 tubs of Knorr Homestyle stock beef, bringing to a boil while stirring until the stock is melted.

Reduce the heat to low and allow to simmer uncovered for 8 minutes.

If using, stir in 2 tablespoons of dry cherry now.

Arrange 6 broiler-proof bowls on a baking pan and ladle the soup into the bowls.

Top each bowl of soup with a slice of French bread and sprinkle 1 and 1/2 cups of shredded Swiss cheese over the top.
