Prepare a food processor for mixing.
Add Medjool dates to the food processor as the base.
Add oat bran, flax seed meal, rolled oats, kosher salt, and cinnamon to the processor.
Add peanut butter to the mixture.
Add banana puree, using about half a banana, to the processor.
Add a little bit of honey to the mixture.
Process the mixture until it forms a sticky ball, ensuring all ingredients are homogeneous.
If there are large pieces of dates or peanut butter, stop and mix them back in, then process again until smooth.
Once the mixture is a smooth paste, transfer it to a bowl.
Prepare a baking sheet with parchment paper for rolling the bites.
Use a scoop to portion out the mixture, or use your hands to pull off pieces.
Roll each portion into bite-sized balls.
Place the rolled balls on the baking sheet or plate.
Refrigerate the balls for about 30 minutes to firm them up before serving.
