1 cup imitation crab meat, shredded
1/2 cup mayonnaise
1/4 cup cucumber, finely chopped
1/4 cup carrot, grated
1/4 cup avocado, diced
1 tbsp lemon juice
1/2 tsp salt
1/4 tsp black pepper
4 slices of bread (white or whole grain)
Lettuce leaves for garnish

In a mixing bowl, combine the shredded imitation crab meat, mayonnaise, chopped cucumber, grated carrot, diced avocado, lemon juice, salt, and black pepper.
