Mince 2 cloves of garlic.
Chop 2 green onions, keeping the stem and leafy parts separate.
Cut cabbage into strips and separate the pieces.
Beat 1 egg and set aside.
Rinse shrimp and pat dry; marinate with salt, sugar, white pepper powder, and sesame oil.
Slice chicken and marinate with salt, soy sauce, rice wine, corn starch, white pepper powder, and sesame oil.
Bring water to a boil in a pot or pan; add rice vermicelli and cook for about 1 minute, then set aside.
Add oil to a hot pan over medium-high heat; cook the egg until firm, then flip and cut into smaller pieces.
Remove the egg from the pan.
Add more oil if needed; add shrimp and pan-fry until golden, then flip and add chicken to the pan.
Once the chicken is golden brown, add minced garlic and stir-fry until chicken is cooked.
Add dark soy sauce for color before removing everything from the pan.
Add more oil if needed; add salt and cabbage, stir-fry for about 1 minute, then remove from the pan.
Add oil to the pan; add the stem part of the green onion and let it sizzle until slightly brown.
Turn heat to low; add soy sauce, fish sauce, dark soy sauce, sugar, and unsalted chicken broth.
Add rice vermicelli to the sauce and stir until absorbed; cover and cook for 3 minutes over low heat.
Remove the lid, turn heat to medium-high; add egg, shrimp, chicken, cabbage, leafy green onion, white pepper powder, and sesame oil.
Stir-fry to mix everything together.
