Pad Thai rice noodles (1 portion, cooked according to package instructions)
8 shrimp, peeled and deveined
1–2 tbsp extra virgin olive oil
1 tsp minced garlic
1/2 tsp grated ginger (optional)
1 small onion, chopped
1/4 red bell pepper, julienned
1/4 green bell pepper, julienned
Salt & black pepper, to taste
Crushed red pepper (optional)
Juice of 1/2 lime (reserve the other half for garnish if desired)
5 tbsp teriyaki marinade and sauce
2 tbsp soy sauce
2 tbsp honey
1 tsp hot sesame oil
Juice of 1 lime
1/4 tsp cayenne pepper (optional, for heat)
Sea salt and black pepper, to taste

Season the shrimp with black pepper, garlic salt with parsley, and a pinch of crushed red pepper. Set aside.

In a small bowl, whisk together the teriyaki marinade, soy sauce, honey, hot sesame oil, lime juice, cayenne pepper, salt, and black pepper. Taste and adjust seasoning if needed.

Cook the Pad Thai rice noodles according to the package directions. Drain, rinse with cool water, and set aside.

In a large skillet or wok, heat 1 tbsp olive oil over medium heat. Add the seasoned shrimp and cook for about 2–3 minutes per side, until pink and cooked through. Remove shrimp and set aside.

In the same pan, add a little more olive oil if needed. Sauté the garlic, ginger, onions, and bell peppers for about 2–3 minutes until slightly softened.

Add the cooked noodles to the pan along with the sauce. Toss well to coat. Stir everything together for 2–3 minutes until heated through and well combined.

Squeeze fresh lime juice over the stir fry before serving. Garnish with parsley flakes and crushed red pepper, if desired.
