Mix whole wheat flour, rye flour, and salt in a large bowl.
Dissolve yeast and sugar in warm water, then let sit until bubbly, about 5-10 minutes.
Add the yeast mixture to the flour mixture along with melted butter and mix until a dough forms.
Knead the dough on a floured surface for 5-10 minutes until smooth.
Cover the dough with a cloth and let it rise in a warm place until doubled, about 1 hour.
Preheat the oven to 200°C (400°F).
Shape the risen dough into a loaf and place it in a greased loaf pan.
Let the shaped dough rise again for 30 minutes.
Optionally, brush the top with milk and sprinkle with seeds.
Bake in the preheated oven for 25-30 minutes until golden brown and sounds hollow when tapped.
Remove from the oven and let cool on a wire rack before slicing.
