1 teaspoon cumin powder
1 teaspoon garam masala
1/4 teaspoon freshly ground black pepper
1 egg yolk (for egg wash)
1 tablespoon milk

Start by making the short crust pastry dough.

In a chilled bowl, add 450 grams of all-purpose flour, 2 teaspoons of sugar, and 1/4 teaspoon of salt; whisk together.

Grate 225 grams of frozen unsalted butter into the flour mixture.

Mix the butter with the flour until it resembles a sand-like texture.

Add 4 egg yolks and 1 tablespoon of chilled water to the mixture and mix well.

Gradually add ice chilled water, 1 tablespoon at a time, until the dough comes together; a total of 6 tablespoons of water is used.

Wrap the dough in plastic wrap and refrigerate to relax.

For the filling, heat 3 tablespoons of vegetable oil in a deep nonstick skillet.

Add 1.5 finely chopped red onions and sauté until translucent.

Add finely chopped pork tenderloin and season with salt, 1.5 tablespoons of sugar, and 1/4 cup vinegar; sauté until well coated.

Optionally add 1/4 cup of pork wine for extra flavor.
