Elk tri-tip is a lesser-known dish that highlights the unique flavors of game meat, often enjoyed in regions where elk hunting is prevalent. This cut is prized for its tenderness and rich flavor, making it a favorite among outdoor enthusiasts and those who appreciate wild game. While elk is not as commonly found in mainstream cuisine, it has gained popularity among chefs seeking to incorporate sustainable and local ingredients into their menus.
Prepare the marinade by mixing together oil, beef broth, honey, rice wine, minced garlic, chopped green onion, sea salt, and seasoning.
Vacuum seal the elk tri-tip with the marinade and let it marinate.
Smoke the elk tri-tip at 225° on super smoke for 20-30 minutes until the internal temperature reaches around 105°.
Increase the Traeger Grill temperature to 475° and cook until the internal temperature hits 125°.
For a more browned exterior, remove the tri-tip and reverse sear it in a hot cast iron skillet.
Slice and serve the elk tri-tip.
