Prepare all ingredients and have them ready before starting to cook the sugar.

Pour 1 1/2 tablespoons of honey into a cup and set it by the stove for later use.

Measure out 5 teaspoons of baking soda and mix in 1/2 teaspoon of cream of tartar.

Boil the mixture until it reaches 284ยฐF (140ยฐC) using a candy thermometer.

At 284ยฐF, add the prepared honey to the mixture.

Continue cooking until the mixture reaches 300ยฐF (150ยฐC).

Remove the saucepan from heat and quickly sift in the baking soda and cream of tartar mixture over the top.

Stir quickly with a wooden spoon until well blended, then pour into a greased and parchment-lined 9x13 pan.

Allow the mixture to grow and cool for at least 2 hours until hardened.

Once cooled, use the end of a rolling pin to crack the sponge toffee into pieces.
