Quinoa Risotto

1 cup quinoa
4 cups vegetable broth
1 medium onion, finely chopped
2 cloves garlic, minced
1 cup mushrooms, sliced
1/2 cup peas (fresh or frozen)
1/2 cup grated Parmesan cheese (optional)
2 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1/4 cup fresh parsley, chopped

Rinse the quinoa under cold water and drain.

In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent.

Add the sliced mushrooms and cook until they are soft, about 5 minutes.

Stir in the rinsed quinoa and cook for 1-2 minutes, allowing it to toast slightly.

Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and the liquid is absorbed.

Stir in the peas, salt, and black pepper. Cook for an additional 2-3 minutes until the peas are heated through.

If using, stir in the grated Parmesan cheese until melted and creamy.

Remove from heat and stir in the chopped parsley.

Serve warm, garnished with additional parsley if desired.
