50 g butter
1/2 teaspoon cinnamon
2 teaspoons salt
1 potato (sliced)
pinch of saffron
2 tablespoons olive oil

Par boil the rice for about 10 minutes and then rinse it again.

Steep the saffron in boiling water (about 1/4 to 1/3 cup).

In a pot, pour in about 2 tablespoons of olive oil.

Layer potato slices on the bottom of the pot to create a crispy layer.

Add a third of the parboiled rice to the pot.

Add half of the chopped herbs and sprinkle half of the saffron water over it.

Add another third of the rice, the remaining chopped herbs, and the rest of the saffron water.

Sprinkle in the remaining salt and top with the last third of the rice.

Make seven holes down to the bottom of the pot for steam vents.

Cover and cook for about half an hour until done.
