Combine whole wheat flour, white flour, rye flour, baking powder, and salt.
Mix in the sesame seeds until evenly distributed.
Add water, honey, and olive oil to the dry ingredients.
Stir until a dough forms, then knead on a floured surface for a few minutes.
Roll out the dough to a thin sheet, about 1/8 inch thick.
Cut into desired shapes or use a round cutter.
Place the cut dough on a baking sheet lined with parchment paper.
Bake for 10-15 minutes until crisp and lightly browned.
Remove from the oven and let cool completely on a wire rack.
