Golubtsi
Cultural Context
Golubtsi, or stuffed cabbage rolls, are a cherished dish in Russian cuisine, often served during family gatherings and festive occasions. Traditionally made with cabbage leaves filled with a mixture of meat and rice, they reflect the resourcefulness of home cooks using available ingredients. Today, variations exist across Eastern Europe, with each culture adding its unique twist, making golubtsi a beloved comfort food worldwide.

Prepare cabbage by blanching leaves in boiling water until pliable, about 2-3 minutes.
Mix ground meat, cooked rice, finely chopped onion, grated carrot, minced garlic, salt, and pepper in a bowl.
Place a spoonful of the meat mixture onto each cabbage leaf, fold sides over, and roll tightly.
Preheat oven to 180°C (350°F).
Spread a layer of tomato sauce on the bottom of a baking dish.
Arrange the cabbage rolls seam-side down in the dish.
Pour remaining tomato sauce over the rolls and add bay leaves.
Cover the dish with foil and bake for 45 minutes.
Remove foil and bake for an additional 15 minutes until heated through.
Serve hot with a dollop of sour cream or Greek yogurt.
