Wash 1 kg of green beans and set aside.

In a pot, cover the green beans with water and bring to a boil. Once boiling, let it simmer for 5 minutes to clean the beans, then drain and rinse under cold water.

Return the beans to the pot, add 1 large garlic clove (with skin), 2 bay leaves, 1 tsp of salt, and a pinch of black pepper. Cover partially and boil for 15 minutes until tender but not mushy.

Reserve the cooked green beans.

In a large skillet over high heat, add a small amount of butter (butter da terra).

Add 150 g of chopped bacon to the skillet and cook until it releases its fat without overcooking.

Add 1/2 cup of chopped onion to the skillet and sauté until it becomes translucent.

Add 1/2 cup of chopped bell pepper and 1/2 cup of chopped tomato to the skillet and stir-fry for a couple of minutes.

Add the reserved green beans to the skillet and stir to combine with the other ingredients. Cook for about 3 minutes, just to heat through.

Taste and adjust seasoning with a little salt if necessary, keeping in mind the bacon already has salt.

Add chopped cilantro and green onion to the skillet and mix well before serving.
