Add arborio rice to the pan with shallots and toast it until shiny and slightly translucent.
Pour in white wine and stir until absorbed, reaching the 'almost dry' stage.
Add two ladles of warm chicken stock to the rice and stir gently until absorbed.
Continue adding stock one ladle at a time, stirring until absorbed before adding more.
Cook until rice is al dente, ensuring it has a slight bite to it.
