Prepare 200 milliliters of room temperature water.
Add 5 grams of dry yeast and half a teaspoon of sugar to the water and dissolve.
Set the yeast mixture aside without waiting for it to ferment.
In a large bowl, combine 500 grams of all-purpose flour with half a tablespoon of salt and mix well by hand.
Incorporate 100 grams of beef fat into the flour mixture by breaking it into small pieces and mixing until it resembles wet sand.
Add the yeast-water mixture to the flour and fat mixture and start incorporating with a spatula.
Once partially mixed, use your hands to form a dough ball.
Transfer the dough to a surface and knead it briefly until smooth.
Cover the dough and let it rest for about 5 minutes to relax the gluten.
Roll out the dough to about 1 centimeter thick.
Cut the dough into circles using a 3.5-centimeter diameter cutter or cut into squares with a knife if no cutter is available.
Gather the scraps, re-roll, and cut more shapes from the remaining dough.
Prick each biscuit with a fork and place them on a greased or non-stick baking sheet.
Cover the biscuits with plastic wrap and let them rest for about 15 minutes before baking.
Preheat the oven to 180°C (approximately 350°F).
Bake the biscuits for 15 to 18 minutes, depending on their size, until lightly golden.
