Heat 3 tablespoons of oil in a pan.
Add whole spices: mustard seeds, cumin seeds, fenugreek seeds, cardamom pods, broken star anise, cinnamon quill, whole cloves, and curry leaves to the oil.
Sauté the spices for a minute.
Add 2 chopped onions and cook until softened.
Add 5 minced garlic cloves and 5 split red bird's eye chilies; stir for a few minutes.
Add 1 big knob of grated ginger and stir through the mixture.
Add 2 tablespoons of mutton masala curry powder and cook for a few more minutes.
Add 1.2 kg of goat meat to the pan and brown it for about 10 minutes, stirring constantly.
Pour in enough plain water to cover the meat and bring it to a boil, then reduce to a simmer and cover.
Let it simmer for about 1.5 hours, checking occasionally and allowing the liquid to reduce.
Once the liquid has reduced and oil starts to separate, add 2 cups of rinsed and soaked basmati rice to the pan and stir gently to coat the rice in the mixture.
Add more plain water to cover the rice and bring it to a boil, then reduce to a low simmer.
Cook for another 20-25 minutes until the rice is done.
Add a handful of chopped coriander (cilantro) and let it rest before serving.
