1 kg goat meat (cut into chunks)
2 chopped onions
5 cloves garlic (minced)
5 red bird's eye chilies (split in half)
1 big knob of ginger (grated)

2 cups basmati rice (rinsed and soaked)
plain water
1 teaspoon sour salt
a handful of chopped coriander (cilantro)

Heat 3 tablespoons of oil in a pan.

Add whole spices: mustard seeds, cumin seeds, fenugreek seeds, cardamom pods, broken star anise, cinnamon quill, whole cloves, and curry leaves to the oil.

Let it simmer for about 1.5 hours, checking occasionally and allowing the liquid to reduce.

Once the liquid has reduced and oil starts to separate, add 2 cups of rinsed and soaked basmati rice to the pan and stir gently to coat the rice in the mixture.

Add more plain water to cover the rice and bring it to a boil, then reduce to a low simmer.

Cook for another 20-25 minutes until the rice is done.

Add a handful of chopped coriander (cilantro) and let it rest before serving.
