Ingredients

  • 2 ripe mangoes, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. 1In a medium bowl, combine the diced mangoes and chopped red onion.
  2. 2Add the minced jalapeño to the bowl.
  3. 3Stir in the chopped cilantro.
  4. 4Squeeze the lime juice over the mixture.
  5. 5Season with salt and black pepper.
  6. 6Gently toss all the ingredients together until well combined.
  7. 7Taste and adjust seasoning if necessary.
  8. 8Let the salsa sit for at least 15 minutes to allow the flavors to meld.
  9. 9Serve with tortilla chips or as a topping for grilled meats.

Ingredients

  • 2 large red bell peppers
  • 1/2 cup cream cheese
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 1 clove garlic, minced
  • 1 tsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp smoked paprika
  • 1/4 tsp cayenne pepper (optional)

Instructions

  1. 1Preheat the oven to 400°F (200°C).
  2. 2Cut the red bell peppers in half and remove the seeds and stems.
  3. 3Place the pepper halves on a baking sheet, cut side down.
  4. 4Roast the peppers in the preheated oven for about 25-30 minutes, or until the skins are blistered and charred.
  5. 5Remove the peppers from the oven and let them cool for about 10 minutes.
  6. 6Once cooled, peel off the charred skin from the peppers and chop them into small pieces.
  7. 7In a mixing bowl, combine the roasted peppers, cream cheese, sour cream, mayonnaise, minced garlic, lemon juice, salt, black pepper, smoked paprika, and cayenne pepper (if using).
  8. 8Mix until well combined and smooth.
  9. 9Transfer the dip to a serving bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  10. 10Serve with crackers, pita chips, or fresh vegetables.
