Nigerian Pepper Sauce, often called 'Stewed Pepper Sauce', is a staple in Nigerian cuisine, originating from the need to preserve and enhance the flavors of fresh ingredients. It is commonly served with rice, yams, or as a base for various dishes, reflecting the vibrant culinary traditions of Nigeria. This sauce is celebrated for its bold flavors and versatility, and has gained popularity in various forms across West Africa and beyond, with each region adding its unique twist.

Prepare the ingredients, including dry tatashe and dry chili pepper that have been dehydrated and washed thoroughly.
Wash the goat meat with vinegar and salt.
Blend garlic, ginger, onion, and habanero pepper to season the meat.
In an empty pot, add goat meat, beef, dry fish, and the blended seasoning mixture.
Add black pepper, thyme, and seasoning cube to the pot.
Allow the meat to steam in its own juices before adding water.
After about 10 minutes, add a bit of water to the pot and cover it to continue cooking.
Bleach the vegetable oil in a covered pot for 7-8 minutes, then let it sit for 10-20 minutes before opening.
Place the beef in a halogen oven and grill for 15-20 minutes.
Add bleached oil to a dry pan and heat it until smoking.
Fry chopped onions and dry prawn in the oil for about 5 minutes.
Add the roughly blended pepper mix to the pan and combine with the onion and prawn.
Cover the pan and let the pepper sauce fry properly.
Add the grilled beef and the stock from the boiled meat to the pepper sauce, then test for salt.
Adjust seasoning if necessary, then continue frying until the oil separates from the pepper sauce.
