Peel and shred 4 large old potatoes, draining excess water using cheesecloth if necessary.
In a bowl, mix the shredded potatoes with 2 eggs.
Add approximately 1 cup of flour to the potato mixture and mix until a dough forms.
Roll the dough into small balls, about the size of ping pong balls.
Bring a large pot of salted water with some oil to a rolling boil, then reduce to low heat.
Gently add the potato balls to the boiling water and cook until they float to the surface.
Chop bacon into small pieces and cook in oil until crispy.
Layer the cooked potato balls, bacon, and cheese in a baking pan, creating two layers of each.
Top with about 1 cup of sour cream and reserved bacon bits.
Bake in the oven at 450°F for 10-15 minutes until golden brown.
