- 3After 2 hours, drain the vegetables and rinse them under cold water to remove excess salt.
- 4In a large pot, combine vinegar, sugar, mustard seeds, celery seeds, turmeric, and black pepper. Bring to a boil over medium heat.
- 5Add the drained vegetables to the pot and stir well to combine.
- 6Reduce heat and simmer for about 20 minutes, stirring occasionally.
- 7Remove from heat and let the mixture cool slightly.
- 8Pour the relish into sterilized jars and seal tightly.
- 9Store in the refrigerator for up to 2 months or process in a water bath for longer shelf life.

- 10Check the internal temperature of the turkey, ensuring it reaches 165°F (74°C) in the thickest part of the breast.
- 11Let the turkey rest for at least 20 minutes before carving.
