Add the mashed plantains to the sautéed vegetables and mix well.
In a separate bowl, whisk eggs and season with salt and pepper.
Pour the eggs over the plantain mixture and stir gently until eggs are set, about 3-5 minutes.
Add diced cheese and chopped cilantro, mixing until cheese is melted.
Serve warm, garnished with avocado and tomato slices.
