In a pot of boiling water, add 600 g of chochos and let them boil for 5 minutes to remove the bitter taste.

After 5 minutes, remove chochos and place them in cold water to stop the cooking process and cool them down.

In another pot of boiling water, cook 3 large ripe tomatoes for 5 minutes.

Once cooked, remove the tomatoes, remove the core, and peel off the skin.

Chop the peeled tomatoes into small pieces and place them in a blender with the juice of 2 oranges (about 1/2 cup) and 1/2 cup of water.

Add 1/2 tablespoon of mustard (optional) to the blender and blend everything very well.

Strain the blended mixture into a bowl to remove any seeds.

Add lime juice to taste and season with salt and pepper to taste, mixing well.

Add sliced red onion and the cooled chochos to the mixture.

Add chopped cilantro to taste and mix everything together well.
