1

Prepare a pizza tray with holes at the bottom and a pastry ring.

2

Gather all ingredients: melted butter, olive oil, fresh dill, phyllo pastry, feta cheese, ricotta cheese, one egg, two cloves of garlic, spring onion, fresh nutmeg, and spinach.

3

Wash 2 kilos of spinach and let it drain for 30 minutes.

4

In a wok, add about 4 tablespoons of olive oil, then add chopped spring onions and garlic, and sweat them down until soft.

5

Add the spinach to the wok and cook, incorporating grated nutmeg and lemon zest, and the juice of half a lemon. Cover with a lid and let it steam for a couple of minutes.

6

Remove the spinach mixture from the wok and drain it in a colander, squeezing out as much moisture as possible.

7

In a bowl, combine the drained spinach with a good sprinkle of fresh dill, 375 grams of ricotta cheese, and 200 grams of feta cheese. Break up the cheese and mix well.

8

Add one large egg to the cheese and spinach mixture and mix until combined.

9

Start with one sheet of phyllo pastry, brush it with melted butter, and lay it butter side down on the tray. Repeat with a total of 10 sheets for the base, brushing each with butter.

10

Add the spinach and cheese filling to the phyllo base, spreading it evenly.

11

Cover the filling with another 10 sheets of phyllo, brushing each with melted butter. Fold over the edges to seal the filling inside.

12

Preheat the oven to 170 degrees Fahrenheit (approximately 77 degrees Celsius).

13

Using a sharp knife, score the top of the spanakopita into portions before baking.

14

Bake the spanakopita in the oven and let it rest before cutting to avoid a mess.
