Start by preparing the roasted potatoes using baby russet potatoes.
Dice the potatoes into bite-sized chunks and place them in a bowl.
For the herb butter, mince about 5-10 cloves of garlic and add to a bowl.
Add 8 tablespoons of melted salted butter to the garlic.
Mix in fresh or dried herbs like mint, parsley, oregano, and lots of rosemary, measuring about 2 tablespoons of each herb.
Sprinkle in 3-4 teaspoons of ground black pepper and half a teaspoon of kosher salt, then stir to combine.
Toss the diced potatoes with the herb butter mixture using your hands until well coated.
Arrange the coated potatoes on a parchment-lined baking sheet that has been sprayed with olive oil cooking spray.
Roast the potatoes in a preheated oven at 400°F for one hour.
While the potatoes are roasting, prepare the t-bone steak by patting it dry with a paper towel.
Season both sides of the steak with kosher salt, ground black pepper, garlic powder, onion powder, and steak seasoning, rubbing it in with your hands.
Heat 3 tablespoons of extra virgin olive oil in a non-stick skillet over medium-high heat.
Once the oil is hot, carefully place the seasoned steak in the skillet.
Cook the steak for 7 minutes on one side, then add a little butter and flip it over.
Cook the other side for another 7 minutes for a total of 14 minutes of cooking time.
Remove the steak from the skillet and place it on a large serving plate.
Check the roasted potatoes; they should be crispy and caramelized after one hour in the oven.
Plate the t-bone steak alongside the herb butter roasted potatoes.
