Wrap the steak with paper towel to wick out moisture while it comes to room temperature.
Check the temperature of the steak; it should be around 64°F to be close enough to room temperature.
Pat the steak down with black pepper and truffle seasoning, adding lots of seasoning and patting it in.
Set the air fryer to 400°F and preheat for a few minutes.
Place the steak in the middle of the preheated air fryer and listen for it to sizzle.
Cook the steak for about 10 minutes, flipping it after 5 minutes.
Check the temperature of the steak at 4 minutes after flipping; aim for no more than 140°F for medium.
Remove the steak from the air fryer and let it rest on a plate, tenting it with foil for 5 minutes.
Check the internal temperature of the steak after resting; it should be around 127-129°F for medium-rare.
Cut the steak apart, starting with the baby tenderloin and then the strip, to see how it looks.
Taste the steak, noting its tenderness and moistness, and mention that it could use a bit more seasoning.
