Chop celery, carrot, and onion to make Sofrito.

Heat a large saucepan on high heat and cover the bottom with extra virgin olive oil.

Add the Sofrito to the pan and fry for about 3-5 minutes until onions are translucent.

Break up the Beyond sausage with a cooking spoon and add it to the pan.

Add the Garden plant-based ground beef, salt, and black pepper.

Pour in the white wine, lower the heat to medium, and partially cover for about 15 minutes until the alcohol smell dissipates.

Add the passata, tomato paste, more salt and black pepper, and the bay leaf to the sauce.

Let the sauce get hot enough to start bubbling, then partially cover and simmer on low heat for 2-3 hours, adding hot water from a kettle if it gets too thick.

After 2 hours, the sauce should reach a thick chili consistency.

Bring a large pot of water to a boil and generously salt it.

Add 80-100 grams of penne pasta per person and cook for 1 minute less than the package instructions.

When the pasta is near al dente, transfer it to another saucepan on medium heat, adding some sauce and a bit of pasta water.

Plate the pasta and add sauce on top.
