Vegan Bolognese

1 pound Beyond Meat
1 tablespoon garlic
1 red onion
1 cup minced bell peppers
1 cup mushrooms
1 can diced tomatoes
1 jar tomato sauce
1 box vegan penne pasta
1 cup vegetable stock
mixed Italian herbs
salt

olive oil
vegan parmesan cheese

Boil water in a big pot for the penne pasta.

Add olive oil to coat the bottom of the pot.

Add minced bell peppers and onions to the pot and cook until translucent.

Add mushrooms and diced tomatoes to the pot.

Stir in 1 tablespoon of garlic, mixed dry herbs, salt, and pepper.

Add 1 pound of Beyond Meat to the pot and cook for about 4 minutes.

Add the tomato sauce to the pot and reduce heat to low.

Add vegetable stock to adjust the sauce consistency.

Cover the pot and let the sauce simmer for 30-40 minutes.

Cook the penne pasta in salted boiling water for 10 minutes, stirring occasionally.

Strain the pasta and add it to the sauce in the sauté pan.

Finish cooking the pasta in the sauce to absorb flavors.

Plate the pasta and top with vegan parmesan and fresh basil.
