In a hot skillet, add Qualy margarine and sauté the carrots, seasoning with salt and black pepper.

In the same skillet, add more margarine and the baby onions; sauté until golden, seasoning with salt and black pepper.

In a serving bowl, combine the cooked lentils, sautéed carrots, and onions, along with pieces of ricotta and arugula.

Season the mixture with salt, black pepper, Sicilian lemon juice, and olive oil; mix well.

Serve immediately.
