Preheat the oven to 400°F (200°C).
Roll out the puff pastry on a floured surface to fit your baking sheet.
Peel, core, and slice the apples thinly.
Melt butter in a skillet over medium heat and add the apples.
Sprinkle brown sugar and cinnamon over the apples and cook until tender, about 5-7 minutes.
Stir in chopped pecans and remove from heat.
In a bowl, mix cream cheese, powdered sugar, vanilla extract, and a pinch of salt until smooth.
Cut the puff pastry into squares and place them on a baking sheet lined with parchment paper.
Spoon a dollop of cream cheese mixture onto the center of each pastry square.
Top with the apple and pecan mixture.
Fold the corners of the pastry squares towards the center to create a pocket.
Beat the egg with a splash of milk and brush the mixture over the pastries.
Bake in the preheated oven for 20-25 minutes, or until golden brown.
Let cool slightly before drizzling with a mixture of powdered sugar and lemon juice.
