Take 1/3 cup of shelled pistachios and do a rough chop into large chunks, then set aside.

Grab 1/3 cup of popcorn kernels (unsalted) and prepare to pop them using an air popper or a microwave method.

If using an air popper, dump the popcorn kernels into the air popper and pop them. If using the microwave, place the kernels in a brown paper bag, roll the top down twice, and microwave on high for 1 and 1/2 to 2 minutes until popping slows.

In a small saucepan, add 2 tablespoons of salted butter and melt it over medium heat.

Once the butter is melted, remove it from heat and add in 2 tablespoons of natural smooth peanut butter. Whisk until smooth and combined.

Add 2 teaspoons of pure maple syrup, 1/4 teaspoon of ground cinnamon, and 1/2 teaspoon of sea salt to the peanut butter mixture. Whisk until completely combined and smooth.

Pour the peanut butter mixture over the popped popcorn and use a large spoon to toss everything together until the popcorn is evenly coated.

Add in the chopped pistachios, 1/2 cup of raw pumpkin seeds, and 1/4 cup of semi-sweet chocolate chips. Toss everything together to mix well.

Taste the mix and if desired, add an extra 1/4 teaspoon of sea salt for additional saltiness.

Store the snack mix in an airtight container for 1 to 2 days, noting that it may become a little soggy due to the butter and peanut butter.
